Sugar-free and sugar-free jam was prepared from fresh blueberries
and stored for 6 months at 4 and 25 degrees. The mixtures were analyzed
immediately after processing and after more than 6 months of storage for
polyphenol content, polymer color and antioxidant capacity. Treatment resulted
in loss of anthocyanin, procyanidins, chromogenic acid and ORAC in both jams,
but flavones were well preserved. A significant loss of anthocyanin and
procyanidins occurred during 6 months of storage and was accompanied by an
increase in polymer colors. Chromogenic acid levels also decreased during
storage, but flavones and ORAC changed little. Jams stored at 4 C had higher anthocyanin,
procyanidin and ORAC content and lower polymer colors than jams stored at 25 C.
Sugar-free jams retained higher anthocyanin concentrations and had lower
polymer colors than late period sugar jams. storage to better preserve the
polyphenols and antioxidant capacity, blueberry jams should be kept in the refrigerator.
